A celebrated name, a serious purpose.
The Right Course is the charity founded by Fred Sirieix, the maître d' many will know from TV's First Dates, to train prisoners in hospitality and help them into work on release.
Its venues open in former prison staff restaurants and run as if they were on the high street. At Wormwood Scrubs, Parogon was proud to deliver the full fit-out of a coffee shop and a table-service restaurant, including all M&E.
The Thinking
The high street, not the canteen.
Fred's idea only works if the setting is real. The restaurant had to look, feel and run like one guests would choose on the high street, so the people training in it learn the job properly.
And every part of the work had to fit the rules and routines of an operational prison.

The Build
Full fit-out, delivered inside the walls.
All mechanical and electrical services and the internal fit-out for both the coffee shop and the restaurant.
Delivered inside the secure estate, within the prison's security procedures.
